Restaurant Bistro Carraigaline
The pub has succeeded up to day to be a stand alone ‘own door attraction’ and yet sits within a hotel.
The next challenge was to to create a Bistro Restaurant. “Just give us the success the pub has given us,” the
client said.
To make the challenge harder the client wanted hotel breakfasts served in the same area. The concept was a mixture of rooms based ontraditional dining rooms, modern bar, Marche food offer, classic American vaulted ballroom, Tudor dining room and The Oval - a curved walled room of stone and glass with a double-sided granite fireplace. Giant angled timber beams unite all the spaces and create passages of intrigue between all the rooms
